More omega-6 than canola oil?
The soyconomy:
The American food system runs on soy and corn. Billions in subsidies pump up production of these two crops, making them the dominant livestock feed in the states, bar-none.
The issue with this? High levels of inflammatory omega-6 polyunsaturated fat (PUFA or Linoleic acid) make it directly from these fatty grains into chickensā feed, then into the egg yolk and on to your plate:
Weāve finally got hard data around this and the results are shocking, an organic, pasture-raised Vital Farms egg has more PUFA than straight canola oil.

Better options:
Soy and corn free eggs can be a challenge to track down. In grocery stores, companies like Utopihen are available in the LA area and some specialty shops in New York.

Conclusions:
This doesnāt mean an organic egg yolk a day will kill you, but be wary of how many you are consuming. They shouldnāt be your primary source of dietary fat for the day.
Your total dietary PUFA intake should be closer to 8%, not the 20-40% of the SAD (standard American diet), so balance out those soy-fed eggs with some cheese and tallow š«”
