The Unlikely Coalition Defending School Lunch Standards

Two letters hit USDA Secretary Brooke Rollins's desk late last month. One from over 900 school districts and nutrition professionals. One from 13 MAHA-aligned organizations, including American Grassfed, Moms Across America, and Farm Action

Same ask, different coalitions: don't raise the meat requirement in the National School Lunch Program. Fix what's already on the tray first.

Why the Letters Exist

The Trump administration unveiled a new federal food pyramid in January that puts protein front and center. RFK Jr. is a loud believer in beef, pork, and lamb. A week after the pyramid dropped, Trump signed a law reversing the Obama-era whole-milk ban in schools.

The USDA is expected to align school meal standards with the new pyramid. More meat on the tray looks like the next move. The two letters are a pre-buttal.

What the Schools Said

The 900-district letter argues that protein adequacy isn't where the gap is. More than 90% of school lunch entrees already feature animal proteins, and most of those are industrial: hot dogs, chicken nuggets, breaded patties, mozzarella sticks, pizza, deli-style cold cuts.

Stacking on another meat requirement pushes schools deeper into the lowest-cost, most-processed options. That's the concern.

Liz Campbell at the School Nutrition Association put the economics plainly: cafeterias run on a $4.60-per-meal budget and serve 4.8 billion meals a year. Any rule change has to be operationally feasible.

What MAHA Said

The March 30 letter from the MAHA coalition lands harder on quality:

  • Roughly 1 in 5 school lunch entrees contain processed meats tied to elevated cancer risk (per a forthcoming analysis cited in the letter)

  • A Moms Across America test of 43 school lunch samples found 93% contained glyphosate, 100% contained heavy metals, and 9 samples contained veterinary drugs or hormones

  • Most animal proteins served in schools come through supply chains that rely on routine antibiotics, ractopamine, and pesticide-grown feed

  • Processed school-grade meats carry additives like nitrites, nitrates, and sodium phosphates. The nitrite-nitrate class is what WHO flags for colorectal cancer risk

Their phased ask: hold the meat requirement steady while USDA reviews sourcing standards, tighten rules on additives and routine pharmaceuticals, expand farm-to-school procurement for grassfed and organic producers, and fund kitchen infrastructure so schools can prep real food on site.

Carrie Balkcom of American Grassfed summed up the supply side: there's no shortage of local, grassfed producers ready to work with school lunch. The incentives aren't there yet.

The Real Problem With School Lunch Protein

The protein itself isn't the issue. The form it shows up in is. A hot dog isn't the same food as a roast chicken thigh. A breaded, industrially fried nugget isn't the same food as a pasture-raised egg.

Both coalitions are telling Rollins the same thing in different words: before the USDA asks schools to serve more meat, it needs to define what kind of meat counts.

Bottom Line

  • Upgrade the protein, don't replace it. Swap industrial deli meat and hot dogs for whole steak, chicken, eggs, or wild-caught fish

  • Read the meat label. Nitrites, sodium phosphates and numerous additives show up in lunchmeat and deli slices. Skip them

  • Look for grassfed & finished, organic, or "no antibiotics / no hormones" when the budget allows.
